What: Making queso - from cashews! The healthy alternative

Fave thing: How it didn’t taste like cheese but more like a spicy hummus dip!
We’re getting desperate for new things to do over here,so back to the kitchen it is. My sister had recently made cashew queso dip, so I headed to her apartment (she’s on my Quaranteam) to whip up a tasty little dish.
Hannah is a health and wellness coach and always experimenting in the kitchen- so this is her run down and we just used what we had on hand - including an immersion blender to blend it all together (a food processor would be better, but hey, it worked!).
The end result was honestly better than if it HAD been more cheesy-like. It was more of a spicy hummus which would be really good on potatoes, in soup, dipped with veggies, or spread on a cracker. So versatile!
Recipe aka what we had in the fridge:
Cashews
Nutritional yeast (more of this and less on the spices if you want it to actually be similar to cheese)
½ Jalapeno
Curry
Chili powder (dash)
Salt
Garlic (lots!)
Apple cider vinegar (a splash)
Coconut aminos (similar to soy sauce, but minus the soy)
Lemon juice
Pesto
Cilantro
